Vegan Smoothie

Hello, I'm back! It's been a while but I'd like to start posting more vegan/vegetarian recipes on this blog. So here's a smoothie / "nice-cream" to begin!



You need:
1 frozen banana
1 banana (not frozen)
1 scoop peanut-butter
1 small dark chocolate bar (broke into pieces)

Basically just throw all of this into the blender, you may have to stir a few times, and it's done! I was craving something chocolately-peanuty so this satisfied my craving!

Vegetarian/Vegan Sandwich!




Vegetarian/Vegan Sandwich! This delicious sandwich is inspired by Five Guys' vegetarian sandwich. It's simple to make and very tasty! 
You will need:
A bun
1 green bell pepper
1/2 avocado
~10 grape tomatoes
1 large mushroom
~1/3 cup of onion
Your choice of condiments: I chose mustard
And I added cheese (but you can leave it off for a vegan)



To make it is so easy! Slice and cut up your pepper, onion, mushroom, and tomatoes the toss them in a pan with oil. Season with salt and pepper if you like. Then when it is done put it on your bun and add and condiments and the avocado. If you have cheese to add, the hot veggies should melt the cheese.
A tip: I don't like cooked tomatoes (the skin gets weird), so I put those in at the end just to let them heat up.

ENJOY this healthy and yummy sandwich!

2 Easy Vegetarian Breakfasts!

I have one sweet and one savory breakfast for you today!

The first is an "ice cream" bowl, which can easily be made vegan as well.
For this you will need:
1 heaping cup Frozen strawberries
1 or 2 bananas (frozen or unfrozen depending on the thickness you want)
Splash of milk (or fruit juice to make it vegan)
Handful of spinach (you won't even notice it I promise!)
Granola

Place the fruit and spinach into a blender, food processor, or I used my NutriBullet, and blend together, adding milk as needed to thin it out. Then scoop out the "ice cream" into a bowl. On top sprinkle some granola and enjoy! SO EASY!









The next is a healthy scrambled egg recipe.
You will need:
2 large eggs
1 large mushroom
A hand full of spinach
1/4 cup of extra sharp cheddar cheese grated




First saute the mushrooms in some oil to get them cooking first.
Then while they're cooking, put the eggs, cheese, and spinach in a bowl and mix.
Pour this mixture into the pan with mushrooms and mix it all together.
Top with a little salt if you wish, and enjoy!
